香芒鮮帶子凱撒沙律 (Mango & Fresh Scallop Caesar Salad)

材 料 : 1 個芒果
1 片方包
8 隻鮮帶子
1 湯匙牛油
西生菜、煙肉碎及芝士粉各適量
沙律汁 : 1 茶匙蒜茸
2 條銀魚柳
1/3 杯橄欖油
2 隻蛋黃(打勻)
1 茶匙法國芥辣
調味料 : 4 湯匙白醋
1/3 茶匙辣椒汁
鹽、糖及胡椒粉各少許
做 法 : (1) 將銀魚柳拌入蒜茸攪成茸,再加入芥辣及蛋汁
充份攪拌混合,逐少加入橄欖油打勻成汁料,
再加入調味料拌勻成沙律汁。
(2) 將生菜洗淨,瀝乾水份後切段,芒果去皮起肉
切粒備用。
(3) 方包切方粒用牛油煎至金黃取起,吸乾油脂待
用。
(4) 鮮帶子洗淨飛水撈起,抹乾後加入少許鹽及生
粉拌勻,用油煎至熟上碟待用。
(5) 將生菜上碟,淋上沙律汁,放上麵包粒、帶子、
芒果粒,撒上芝士粉及煙肉碎,即可供食。
備 註 : (1) 銀魚柳俗稱鬼佬咸魚,在大型超級市場有售,
每人口味不同,可按自己口味調校調味料。
Mango & Fresh Scallop Caesar Salad
Ingredients : 1 Mango
1 slice white bread
8 Fresh scallop
1 tbsp butter
Some lettuce, chopped bacon & cheese powder
Dressing : 1 tsp chopped garlic
2 Anchovy fillet
1/3 cup olive oil
2 Egg yolk (beaten)
1 tsp French mustard
Seasonings : 4 tbsp white vinegar
1/3 tsp chilli sauce
Some salt, sugar & a pinch of pepper
Method : (1) Mash anchovy filet with garlic. Add in French
mustard & beaten egg yolk, blend well. Add in
olive oil gradually & then put in seasonings, beat
well in a salad dressing.
(2) Rinse, wipe dry & cut lettuce into sections. Skin &
remove core of mango, slice it into pieces.
(3) Cut white bread into dices and shallow-fry it with
butter until golden, soak up the fat.
(4) Rinse and wipe dry scallop. Add in some salt and
cornflour. Shallow-fry it until done & dish up.
(5) Dish up the lettuce & pour on the salad dressing.
Put on the bread, scallop & mango dices. Sprinkle
with cheese powder & chopped bacon. Serve
